Always crispy
Flinn Crumbs are a high-quality alternative to classic breadcrumbs and more specifically to products baked in the oven. The main ingredient is also wheat flour. Thanks to a thermomechanical treatment and a balanced recipe, Flinn Crumbs are crispier and have a lower bulk density.
This unique crispness is related to higher porosity and hardness.
Thanks to their neutral flavour and authentic appearance, Flinn Crumbs are suitable for breaded meat, fish, potatoes and vegetable products. Flinn Crumbs are available in 6 colours and 3 grain sizes. The colour is retained during baking in both the oven and airfryer.
The unique texture is maintained when the breaded product is kept in the freezer or in a warming drawer. This guarantees the crispy aspect at all times.
Personalised coating concept tailored to customer requirements
By adding Flinn Crumbs to the coating range, we can offer a customised coating concept. The development process takes into account the substrate (e.g. ragout, meat, fish), crust thickness, production process and preparation by the end consumer. The Flinn Texture range also lends itself perfectly to optimally binding products such as ragout.
For oven and airfryer applications, it is recommended to combine Flinn Crumbs with Batter Oven. The batter forms a strong sealing layer during pre-frying, while Flinn Crumbs add an extra crispy layer to the product. Moreover, this functional coating ensures stable quality during storage in a warming drawer.
Test from practice: ragout croquettes
Deep-fried ragout croquettes were coated with standard batter and classic breadcrumbs. During storage in a warming drawer at 80°C, the coating lost its firmness and became sticky. Sensory tests also showed a loss of the crispy aspect over time.
In contrast, oven-baked ragout croquettes coated with Batter Oven and Flinn Crumbs clearly retained their firmness when kept in a warming drawer at 80°C. Sensory tests indicated that the crispy aspect was maintained over time.
